Recently I met with Candice Kumai the former host of Lifetime’s Cook Yourself Thin and TLC’s Homemade Simple. You might also know her from a little show called Top Chef. The list of her accomplishments goes on and on. So when this (gorgeous) healthy recipe creator hands you a bag of granola declaring it has delicious beautifying powers, you eat it! And eat it, I did. Frankly, I’m kind of addicted now. Luckily Candice agreed to give me her recipe so I could share it with you…since I already finished (without sharing) the granola she gave me.
This granola is the perfect blend between salty and sweet, and healthy and delicious. It contains carbs, protein, antioxidants and omega-3 fatty acids (all super good for your skin) for snacking at the office or for your kids as an after-school snack. Your little ones will probably love the addition of toasted coconut (yum!).
Cascadian Farm Beauty Blend
- 1 cup Cascadian Farm organic Oats & Honey Granola
- 1 cup raw almonds
- 1 cup raw pumpkin seeds or pepitas
- 1/2 cup dried cranberries
- 1/4 cup toasted coconut
- 2 tablespoons flaxseed
- 1 tablespoon maple syrup
- 1 tablespoon melted coconut oil
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/8 – 1/4 teaspoon sea salt
1.) Preheat oven to 350 degrees.
2.) On a large sheet tray add the almonds and pepitas. Place into the oven and roast at 350 degrees for 12 minutes. Remove and cool. Lower the oven to 300 degrees.
3.) Add dry ingredients to the sheet tray of roasted nuts, add in the spice blend and toss well to combine and fully coat. Roast off your trail mix for 8 additional minutes. Remove, cool and serve.
Quick Snack Tip: When roasting trail mix or nuts in the oven, use the middle rack to prevent burning.
Makes 6-8 servings.
