Welcome to our 5-Week Beauty Lunch Series focused on beauty from the inside out with delicious, nutritious and easy-to-prepare meals from our favorite healthy chefs! Each week we’ll share a new recipe highlighting its skin benefits.
As the finale to our series of healthy, beauty foods for skin we were craving cooling foods to quell this summer heat and wanted something beautifying, refreshing, and filling. With such a tall order in mind, we dove into Lisa Drayer’s indispensable book The Beauty Diet to find just that.
We went crazy for her healthy Grilled Chicken Salad with Blueberries Over Spinach. It’s bursting with antioxidants, skin plumping nutrients and lean protein. Let’s also take a moment to appreciate the delectable raw honey, balsamic dressing that ties in all the flavors that I would never have thought to combine. Lisa Drayer certainly knows what she’s doing!
As a registered dietitian, regular contributor to CNN and the weight loss expert for Women’s Health, Lisa has counseled many television celebrities, models, and high profile politicians. Lisa’s advice has also been featured in several national magazines such as Elle, Seventeen and The New York Times.
As part of the Beauty Lunch Series we like to talk about which nutrients in these foods are incredibly beneficial for your overall beauty; from plumper, younger looking skin, to healthy hair and nails.
Blueberries are known to be abundant in antioxidants which help neutralize free radicals that could otherwise harm the skin. They are also filled with phytochemicals, an occurring nutrient that helps protect cells from damage. Blueberries are a low calorie way to achieve a radiant glow, while providing your body with 25% of the daily recommended intake of Vitamin C, one of the most common contributors to a clear complexion, along with other health benefits such as healthy gums, absorption of iron, and healthy capillaries.
Cucumbers are made up of 96% water, helping our bodies to stay hydrated, which is essential for a clear complexion. They are also filled with skin-friendly minerals such as magnesium, potassium, and silicon. Cucumbers are also filled with an abundant source of Vitamin K, B Carotene and lutein, which help prevent those nasty free radicals wreak — yes, we’re talking about wrinkles!
Spinach is the base of our salad and is known as a superfood because it’s especially beneficial for having beautiful skin and hair. Spinach is loaded with vitamin C to make collagen, a protein used to aid in the renewal of new skin cells. The minerals in spinach is known to help alkalize the body and aid in balancing off a highly acid diet that many of us have which drains our energy levels and can increase obesity.
Spinach Salad Topped With Grilled Chicken, Blueberries and Cucumber with A Raw Honey, Balsamic Dressing
1 tablespoon of raw honey
1 tablespoon of Dijon mustard
1/4 teaspoon of kosher salt
1 tablespoon of balsamic vinegar
1 tablespoon of extra virgin olive oil
1 pound of boneless, skinless chicken breast
1/4 teaspoon of kosher salt
1 tablespoon of fresh lemon juice
8 cups of baby spinach
1 cup of blueberries
1 cup of sliced cucumbers
2 tablespoons of chopped fresh chives
*We strongly recommend choosing organic for all of the ingredients listed above.

1: Preheat a grill for cooking over direct heat or heat a grill pan over medium high heat.
2: Prepare the dressing by whisking the honey, Dijon mustard, salt and the balsamic vinegar in a small bowl until well combined.
3: Continue to whisk while drizzling in the oil until combined. Set aside.
4: Season the chicken with salt and lemon juice and grill until cooked through, 3-5 minutes on each side. Let cool slightly and slice.
5: Top the spinach with blueberries, cucumber, sliced chicken, chopped chives, and dressing. Toss well. Garnish with lemon wedges.
